500 g potatoes
150 g peas
150 g diced Serrano ham or finely-chopped slices

Elaboration
STEP 1
Quarter the potatoes, drizzle with oil, season with salt. STEP 2
Bake in the oven at 180ºC for around 20 minutes. STEP 3
Break each egg into a square of clingfilm with a little olive oil and a pinch of salt. STEP 4
Secure well and place gently in simmering water STEP 5
Cook for around 4 minutes, depending on how well you like your eggs done. STEP 6
Saut the peas with the Serrano ham. STEP 7
Arrange the potatoes, peas, ham and poached egg on a plate and season and garnish to taste.
